File de salau cu spuma de somon si sos de midii

2 fileuri de salau
300 g somon proaspat
300 g midii
250 ml smantana dulce
250 ml vin alb sec
2 albusuri de ou batute spuma
1 ceapa
1/2 lamaie
30 g unt
sare, piper

Fileul de salau se transeaza in 2 felii subtiri, apoi se aseaza umplutura in mijloc si se impacheteaza spre centru. Intr-o tava putin adanca unsa cu unt se pun fileurile de salau umplute cu spuma de somon obtinuta cu ajutorul unui blender electric din somonul proaspat, sare si piper, suc de lamaie, toate acestea fiind amestecate cu albusurile batute spuma.
In tava se adauga vinul alb si ceapa tocata marunt si se introduce in cuptorul incins la 160°C. Midiile se soteaza in putin unt intr-o tigaie. Se adauga sosul strecurat rezultat din gatirea pestelui la cuptor, se reduce si se adauga smantana.
