Sos de vin si sofran

300 ml vin alb,
5 boabe piper,
codita de la 2-3 fire de marar ( frunzulitele se toaca separat),
2 fire de cimbru,
1/2 ceapa tocata f. marunt
1 catel de usturoi strivit,
4 linguri de smantana lichida,
50 gr unt,
sare,
piper,
un varf de cutit de praf de sofran (sau cateva fire).

Se fierbe vinul, boabele de piper, coditele de marar si cimbru, ceapa si usturoiul la foc foarte mic pana se reduce la 1/3. Se adauga smantana lichida, sare si piper dupa gust si se lasa sa clocoteasca, pana scade si se ingroasa.
Se adauga apoi cate o lingurita de unt si se amesteca pana s-a topit complet si de-abia apoi se mai pune inca o lingurita, si tot asa pana se incorporeaza tot untul.
Se da la o parte de pe fic si se adauga praful de sofran, numai putin si o sa aiba o culoare f. galbena si un parfum deosebit.
